- ½ cup cashews
- 1 cup grated parmesan cheese
- ⅓ cup fresh basil
- ⅓ cup olive oil
- squeeze of lemon juice
- Finely grind or process ½ cup cashews (I use unsalted roasted ones) with 1 cup grated parmesan cheese and ⅓ cup fresh basil.
- Slowly add ⅓ cup olive oil, and a squeeze of lemon juice while processing it until well combined.
- Toss through hot pasta and serve.
