Traditional Christmas Pudding

Traditional Christmas Pudding
A recipe from my mum and possibly her mum.

Ingredients
  • 85g Almonds
  • 750g Raisins
  • 750g Mixed Dried Fruit
  • 250g Dates
  • 6 eggs
  • 6 tablespoons Brandy
  • 500g butter
  • 250g plain flour
  • 2 tsp Mixed Spice
  • 1 Tsp Nutmeg
  • 250g Sugar
  • 250g White breadcrumbs
  • 1 cup milk
  • castor sugar
Instructions
  1. Blanch and skin almonds, then chop fruit and mix all fruit and almonds. Cut butter into small pieces and rub into the sifted flour and spices, add sugar, fruit and breadcrumbs. Beat eggs, add milk and brandy then stir into the dry ingredients and mix well. Fill a greased pudding basin with mixture and cover with buttered paper. Cover again with a scalded pudding cloth and tie securely. Plunge into boiling water and boil for six hours. Hang the pudding in an airy place and boil for a further 2 hours on the day of serving. Serve sprinkled with castor sugar.

Self Saucing Chocolate Pudding
Ingredients
Pudding
  • 1 cup of self raising flour
  • ½ teaspoon of salt
  • 1 teaspoon of vanilla essence
  • ¾ cup of sugar
  • 2 tablespoons of Cocoa
  • ½ Cup of Milk
  • 2 Tablespoons of butter. (not margarine)
Sauce
  • ¾ Cup of Brown Sugar
  • ¼ Cup of Cocoa
  • 1¼ Cups of Boiling Water
Instructions
  1. Sift dry pudding ingredients into a bowl.
  2. Gradually stir in milk, vanilla and melted butter. Once the mixture is smooth and lumps are removed pour it into a oven dish.
  3. Mix together the sauce ingredients. Gently pour the ingredients over the uncooked pudding base. Bake in a moderate oven (180c) for 40 minutes.

Strawberry Mousse

Strawberry Mousse
Serves: 6
Ingredients
  • 1 punnet strawberries
  • 300 ml thickened cream
  • 2 teaspoons water
  • 1 teaspoon gelatine
  • 1 tablespoon lemon juice
  • 2 egg whites
  • ⅓ cup castor sugar
Instructions
  1. Wash and remove the tops of strawberries, mash well.
  2. Add gelatine to the water and let stand for 5 minutes. Then dissolve it over hot water.
  3. Beat the egg whites until it has soft peaks. Gradually add sugar, beating until dissolved. Whip the cream until it has soft peaks and fold into egg white mixture.
  4. Add strawberries, lemon juice and fold in lightly.
  5. Pour the mixture into serving dishes or glasses and refrigerate until set.
  6. Serves 6

Small Date Pudding

Small Date Pudding
Ingredients
  • 1 cup chopped dates
  • 1 cup milk
  • 2 tablespoons
  • ½ cup sugar
  • 1 teaspoon bicarbonate soda
  • 1 cup self raising flour
Instructions
  1. Place dates, milk, butter and sugar into a saucepan. Bring to the boil, stiring constantly while frothing, add sifted flour. Mix well, cover and steam for 1½ hours.

Rum and Honey fruit salad

Rum and Honey fruit salad
Ingredients
  • 3 tablespoons honey
  • 3 tablespoons dark rum
  • 1 teaspoon Angostura bitters (optional)
  • 1 large orange
  • 1 large Fuji or Golden Delicious apple, unpeeled, cored, diced
  • 1 pear, unpeeled, cored, diced
  • 1 banana, peeled, sliced
  • 1 cup seedless red and green grapes
  • 1 cup strawberries, hulled, halved
  • 1 cup raspberries and/or blueberries
Instructions
  1. Whisk honey and rum in large bowl to blend. Add bitters, if desired. Cut away peel and pith from orange. Working over same bowl, cut between membranes to release orange segments and juice into bowl. Mix in remaining fruit. Chill at least 30 minutes and up to 4 hours.

Pineapple Fritters

Pineapple Fritters
Ingredients
  • ½ cup plain flour
  • pineapple slices (around 8 - 10)
  • pinch salt
  • ⅓ cup warm water
  • 1 tablespoon oil
  • oil for deep-frying
  • 1 egg, separated
Instructions
  1. Sift the flour and salt into a bowl and make a well in the centre. Add the oil, egg yolk, and water then beat well until the batter is smooth.
  2. Let it stand at room temperature for half an hour. Meanwhile beat the egg white until soft peaks occur. Then fold into the batter.
  3. Drain the pineapple and pat with paper towel to dry, then coat in the batter.
  4. Deep fry in hot oil until golden brown.
  5. Drain on some paper towel and sprinkle with sugar. Serve hot.

Pavlova

Ingredients
  • 6 egg whites
  • 1 teaspoon vinegar
  • 1 teaspoon vanilla
  • 1½ cups castor sugar
  • 1½ tablespoon cornflour
Instructions
  1. Whisk egg whites until stiff, add half the sugar and whisk until dissolved. Fold in the rest of the sugar, vinegar, vanilla and cornflour.
  2. Line the tray with foil and place mixture in centre of foil, smooth around with palette knife.
  3. If using a gas oven, before starting to beat, mix, turn temperature up to the highest and when ready place tray into oven, turn down to the lowest point cook for about 1½ hours. Check if firm to touch, turn oven off and leave to cool in the oven gradually.

No Cook Lemon Cheesecake

No Cook Lemon Cheesecake
Ingredients
  • 10g lemon gelatin
  • 1 cup boiling water
  • 1 package cream cheese, softened
  • 1 cup sugar
  • 400g evaporated milk
  • 1 pie crust
Instructions
  1. Mix lemon gelatin and boiling water then chill slightly.
  2. In a mixing bowl, beat cream cheese and sugar until smooth; set aside.
  3. In another bowl, whip the sweetened condensed milk until stiff.
  4. Add the gelatin mixture to the cream cheese, then fold into the whipped sweetened condensed milk.
  5. Pour into the prepared crust. Chill overnight.

Mince Tart

Mince Tart
Ingredients
  • 375g shortcrust pastry
  • ½ teaspoon ground cinnamon
  • 2 apples
  • ½ teaspoon grated nutmeg
  • ¼ cup currants
  • 2 tablespoons water
  • ¼ cup sugar
  • Grated rind and juice of ½ lemon
  • ¼ cup sultanas
  • 15g butter
  • ¼ cup mixed peel
  • A little extra sugar
  • ½ teaspoon mixed spice
Instructions
  1. Grease a 20cm Pie Plate. Roll out pastry thinly and line the Pie Plate with half of it. Combine all the remaining ingredients except the extra sugar and spoon into the pastry lined shell. Damp pastry edges and cover with the rest of the pastry. Crimp edges and cut slits in the top. Brush with water and sprinkle with the extra sugar. Bake in a hot oven (220°C) for 10 minutes, then reduce heat to 180°C for a
  2. further 10 minutes, or until pastry is cooked and lightly browned. 6 servings.

Mango Pudding

Mango Pudding
Ingredients
  • 4 cups sliced mangoes
  • 1½ cups sugar
  • ½ tsp cinnamon
  • ¼ tsp allspice
  • 1 cup cup plain flour
  • 1 tsp baking soda
  • ½ cup milk
  • ⅛ tsp salt
  • ½ cup melted butter
  • 500ml vanilla ice cream.
Instructions
  1. Preheat oven to 180 C. In a glass baking dish: put mangos with ½ of the sugar, the cinnamon and allspice. Stir remaining sugar with milk, flour, soda, salt and butter and pour over mangos, bake for 35 min. Serve with ice cream.
