Eggs and Asparagus Au Gratin

Eggs and Asparagus Au Gratin
Ingredients
  • 30g butter
  • 2 cups grated tasty cheese
  • 1 tablespoon plain flour
  • 2 cups chopped, canned, asparagus, drained
  • 1½ cups milk
  • 4 hard boiled eggs
  • ½ teaspoon salt
  • ¼ cup dry breadcrumbs
  • ¼ teaspoon pepper
  • ¼ teaspoon dry mustard
Instructions
  1. Butter a Pie Dish. Melt butter in a saucepan, add flour and cook a few minutes. Stir in the milk gradually and bring to the boil. Add seasonings and three quarters of the cheese. Stir until cheese melts. Arrange half the asparagus, eggs and sauce in layers in a Pie Dish. Repeat layers. Sprinkle remaining cheese and breadcrumbs on top. Bake in a moderate oven (180C) for 20 to 25 minutes, or until bubbling hot and top is golden brown.

Egg and Lettuce cups
Ingredients
  • 4 eggs, hard boiled
  • 1 Tbsp mayonnaise
  • ¼ tsp curry powder
  • 12 baby cos lettuce leaves
Instructions
  1. Place eggs in a bowl and mash, add mayonnaise and curry powder and combine. Arrange the lettuce leaves on a serving platter and spoon in the egg mixture and serve.

Spinach Egg And Rosti Bake
Ingredients
  • 3 light cups of grated potato and sweet potato
  • 1 tablespons butter
  • 1 tablespoon oil
  • 4 rashes of bacon
  • 5 eggs
  • salt and pepper
  • 1 tablespoon of fresh, chopped sage
  • 2 handfuls of spinach, chopped
  • 1½ cups grated tasty cheese
Instructions
  1. Preheat the oven to 200C. Lightly oil a 20cm square glass dish, pan, or silicon cake tin.
  2. Squeeze the water out of the potato and drain on paper towel. Heat the butter and oil in a frypan and cook the potato, turning often until it starts to brown. Press into the bottom of the square tin and place in the oven while you prepare the bacon.
  3. Fry the bacon lightly and place over the potato.
  4. Lightly beat the eggs, add sage and salt and pepper then mix in one cup of the cheese and the spinach. Pour evenly over the bacon and potato and place back into the oven.
  5. When the eggs are almost cooked (about 10 -12 minutes) sprinkle on the remaining cheese and leave in the oven to melt for a few more minutes. Or you can use the grill to brown the top. Cut into squares and serve warm as breakfast or brunch. It is also great cold as a picnic slice for lunch.

  • 6 eggs
  • 40g butter
  • salt and pepper

  1. Beat eggs and add salt and pepper. Melt butter in a saucepan and pour in the eggs Stir over a low heat until nearly set. Serve immediately on hot buttered toast. Chopped ham, tomato, cheese or chopped parsley may be added

Rolled Spinach Omelette
Ingredients
  • Olive oil
  • 1 cup milk
  • ⅓ cup plain flour
  • 8 large eggs
  • 1 tablespoon wholegrain mustard
  • Coarse salt and ground pepper
  • 3 or 4 cups chopped fresh young spinach (or frozen)
  • 1½ cups shredded tasty cheese
Instructions
  1. Preheat oven to 180 degrees. Brush or spray a large lamington pan or similiar with oil. Line bottom of pan with baking paper, leaving a 2cm overhang on the two shorter sides. Brush or spray paper with oil.
  2. Whisk together milk and flour. Add eggs, mustard and seasoning then whisk to combine. Pour into pan. Sprinkle spinach over top in an even layer. If using frozen spinach then thaw and squeeze out the water and drain on paper towel.
  3. Bake until edges of omelette are set, 10 to 12 minutes. Sprinkle with cheese; bake until cheese has melted, 2 to 4 minutes. Beginning at one shorter end, lift the paper, and roll up omelette tightly, peeling back paper as you go. Slice and serve.

  • 30cm pastry shell
  • 1 cup cream
  • 2-3 eggs, bacon (4 -5) rashes
  • 1 onion
  • Gruyere cheese (or mozzarella)
  • salt, pepper.
Instructions
  1. Slightly brown sliced bacon and sliced onion in a little butter, let it cool down and place in pastry shell, add ground cheese, beat eggs well and then mix in cream, salt and pepper, pour in shell. Backe at 200� C for approx. 35 min or until brown.

Leek and Bacon Quiche

Leek and Bacon Quiche
Ingredients
  • Short pastry or Gluten free shortcrust pastry
  • 20g butter
  • 1 large leek, trimmed, halved, thinly sliced
  • 180g rindless shortcut bacon, chopped
  • 2 tablespoons chopped fresh parsley leaves
  • 1 teaspoon chopped fresh marjoram
  • ½ cup grated tasty cheese
  • 4 large or extra large eggs
  • ½ cup milk
  • salt and pepper to taste
Instructions
  1. Roll out and line a quiche dish, pie dish or springform pan around 20cm in diameter. Bake at 190C for 15 minutes or until firm and browning.
  2. Meanwhile, make filling. Melt butter in a frying pan over medium-low heat. Add leek and bacon. Cook, stirring occasionally, for 10 to 12 minutes or until leek is soft. Remove from heat. Stir in herbs. Cool. Turn the oven down to 180°C/160°C fan-forced when the pastry is done.
  3. Spoon leek mixture into pastry case. Top with cheese. Whisk eggs and milk together in a jug. Season with salt and pepper. Pour over leek mixture. Bake for 30 minutes or until top is golden brown.

  • 6 hard boiled eggs
  • 1 tablespoon plain flour
  • 1 tablespoon finely chopped ham or bacon
  • 1 egg, beaten 1 teaspoon chopped parsley
  • dry breadcrumbs
  • 1 teaspoon butter
  • oil or fat for frying
  • salt and pepper
Instructions
  1. Cut eggs in half lengthwise. Remove yolks and mash with a fork. Add ham, parsley, butter, salt and pepper. Put the halves together, roll in flour, then in egg and finally in the breadcrumbs. Fry in hot fat or oil.

Ingredients
  • 4 eggs
  • 1 cup milk
  • 3 tbsp melted butter
  • ½ cup SR Flour
  • ½ cream
  • 1½ cups grated cheese
  • 2 cups of your choice of filling
  • (eg onion, capsicum, zucchini, mushrooms, bacon, ham, salami)
Instructions
  1. Mix the eggs, flour, milk, cream and butter. Stir in the cheese and fillings. Pour into a 24cm quiche dish. Bake on 180 Celsius for 40 minutes or until set.

  • 60g butter
  • ¼ cup plain flour
  • 1 cup milk
  • ¼ teaspoon dry mustard
  • 1 teaspoon salt
  • pinch cayenne pepper
  • 1½ cups grated tasty cheese
  • 3 eggs, separated
Instructions
  1. Melt butter in a saucepan, stir in flour and cook a few minutes. Gradually add milk, stirring constantly. Bring to boil. Add mustard, salt, cayenne and cheese. Stir until cheese melts. Cool. Then stir in well beaten egg yolks. Beat egg whites until stiff. Fold into cheese mixture lightly. Pour into an ungreased souffle dish and
