Melt butter, add flour and cook for a few minutes. Gradually add milk and stir continuously until boiling. Makes 1 cup.
Variations
For cheese sauce add 60 grams of grated cheese and a pinch of cayenne pepper to the white sauce and stir until the cheese is melted. This is great with cauliflower!
To make parsley sauce add 3 tablespoons of parsley to the white sauce. Good on fish or vegetables.
For onion sauce, that is lovely on corned beef, boil two onions in salty water. Chop finely and stir through hot white sauce.
Mix dry ingredients well and add vinegar and well beaten egg. Put in a double saucepan and cook till thick. Put in a jar and keep in the fridge. Mix equal amounts of dressing and cream or substitute when needed.
Mix cornflour to a smooth paste with some of the milk. Put the rest of the milk on to boil. Pour the milk on to cornflour, return it to the saucepan and boil for 4 minutes, stirring all of the time. Remove from the heat and add sugar and lemon rind. Cool slightly, then add well beaten egg yolk and finally egg white beaten until stiff but not dry. Stir over low heat and do not allow to boil again. Makes about 1¼ cups
Mash the avocado with a fork and blend the lemon juice through it. Add the onion, tomatoes, chillies and garlic. Mix through the sauce, mayonnaise and pepper with salt to taste. Cover with plastic wrap and refrigerate until ready to use.
Put a tablespoon of butter or margarine in a middle size sauce pan melt the butter than put in cream. cook mushrooms in a fry pan in butter un till cooked put mushrooms in the sauce pan stir in grated cheese stir until cheese is melted put in a pinch of salt and pepper then stir till all blended and boiling serve over steak.
