Raspberry Vinaigrette

Ingredients
  • 120 ml olive oil
  • 120 ml raspberry vinegar
  • 50g sugar
  • 10 ml dijon mustard
  • ½ tsp mixed herbs
  • ½ tsp ground black pepper

White Sauce

White Sauce
Ingredients
  • 30g butter
  • 2 tablespoons plain flour
  • 1 cup milk
Instructions
  1. Melt butter, add flour and cook for a few minutes. Gradually add milk and stir continuously until boiling. Makes 1 cup.
Variations
  1. For cheese sauce add 60 grams of grated cheese and a pinch of cayenne pepper to the white sauce and stir until the cheese is melted. This is great with cauliflower!
  2. To make parsley sauce add 3 tablespoons of parsley to the white sauce. Good on fish or vegetables.
  3. For onion sauce, that is lovely on corned beef, boil two onions in salty water. Chop finely and stir through hot white sauce.

Mint Sauce

  • 1 tablespoon chopped mint
  • 1 tablspoon white sugar
  • 1 tablespoon boling water
  • 2 tablespoon vinegar
Instructions
  1. Boil sugar and water , 1 minute. Add water and sugar, and vinegar to mint. Allow to stand 15 mins stir well before serving.

Egg Mayonnaise

Egg Mayonnaise
Ingredients
  • 1 egg
  • 2 tablespoons vinegar
  • 2 tablespoons sugar
  • 1 small teaspoon salt
  • 1 small teaspoon mustard
  • 1 teaspoon cornflour
  • ½ teaspoon butter
Instructions
  1. Mix dry ingredients well and add vinegar and well beaten egg. Put in a double saucepan and cook till thick. Put in a jar and keep in the fridge. Mix equal amounts of dressing and cream or substitute when needed.

Lemon Sauce

Lemon Sauce
Ingredients
  • 1 teaspoon cornflour
  • 1 cup milk
  • 1 tablespoon sugar
  • Finely grated rind of 1 lemon
  • 1 egg separated
Instructions
  1. Mix cornflour to a smooth paste with some of the milk. Put the rest of the milk on to boil. Pour the milk on to cornflour, return it to the saucepan and boil for 4 minutes, stirring all of the time. Remove from the heat and add sugar and lemon rind. Cool slightly, then add well beaten egg yolk and finally egg white beaten until stiff but not dry. Stir over low heat and do not allow to boil again. Makes about 1¼ cups

Honey lemon salad dressing

  • ½ cup honey
  • ½ cup lemon juice
  • ¼ cup sherry
  • 2 tablespoons toasted sesame seeds
  • 2 pinches of salt
Instructions
  1. Put everything in a jar with a lid and shake. Chill and then shake again before using.

Guacomole

  • 1 big avocado or 2 small ones
  • 1 tablespoon lemon juice
  • 1 small onion, chopped fine
  • Half a clove of crushed garlic
  • 1 small tomato chopped
  • 2 hot chilis (or to taste)
  • 1 teaspoon worchestershire sauce
  • 1 tablespoon mayonnaise
  • ¼ teaspoon cayenne
Instructions
  1. Mash the avocado with a fork and blend the lemon juice through it. Add the onion, tomatoes, chillies and garlic. Mix through the sauce, mayonnaise and pepper with salt to taste. Cover with plastic wrap and refrigerate until ready to use.

  • Sliced mushrooms
  • Small Thicken cream
  • Grated cheese
  • Salt/pepper
  • Butter/margarine
Instructions
  1. Put a tablespoon of butter or margarine in a middle size sauce pan melt the butter than put in cream. cook mushrooms in a fry pan in butter un till cooked put mushrooms in the sauce pan stir in grated cheese stir until cheese is melted put in a pinch of salt and pepper then stir till all blended and boiling serve over steak.

Coriander Pesto

Coriander Pesto
Ingredients
  • ½ cup pine nuts
  • 1 cup grated parmesan cheese
  • ⅓ cup fresh coriander
  • 2 tablespoons garlic chive
  • two small chilis.
  • ⅓ cup olive oil
  • squeeze of lemon juice
Instructions
  1. Finely grind or process ½ cup pine nuts with 1 cup grated parmesan cheese and ⅓ cup fresh coriander, 2 tablesppons garlic chives and two small chilis.
  2. Slowly add ⅓ cup olive oil, and a squeeze of lemon juice while processing it until well combined.
  3. Toss through hot pasta and serve.
