Sultana and Coconut Slice

Sultana and Coconut Slice
Ingredients
  • 150g unsalted butter, melted
  • ½ cup brown sugar
  • 1 cup plain flour
  • ½ cup desiccated coconut
  • 2 eggs
  • 1 cup brown sugar
  • ½ cup plain flour, sifted
  • ½ teaspoon baking powder, sifted
  • 1½ cup sultanas
Instructions
  1. Preheat oven to 180 C. Place the butter, sugar, flour and coconut in a bowl and mix to combine. Press the mixture into a 20cm x 30cm slice tin lined with non-stick baking paper. Bake for 15 minutes or until golden. Set aside. To make the topping, place the eggs and sugar in a bowl and beat with an electric mixer until pale and thick. Fold through the flour and baking powder and stir in the sultanas. Spread the topping over the base and bake for 25 minutes or until golden. Allow to cool in the tin and cut into squares to serve.

Raspberry coconut slice
Ingredients
  • 2 cups plain flour
  • ½ cup caster sugar
  • 90g unsalted butter
  • 1 egg
  • 1 cup raspberry jam
  • For the topping
  • 2 cups desiccated coconut
  • 3 eggs
  • ¼ cup caster sugar
Instructions
  1. Preheat oven to 200 celsius. Grease a 18 x 28cm slab pan and line the base and sides with non-stick baking paper.
  2. Place the flour, caster sugar and butter in a food processor and process until the mixture resembles fine breadcrumbs. Add the egg and process until the mixture just forms a ball.
  3. Press mixture evenly over the base of the prepared pan and bake in preheated oven for 10 minutes or till just starting to brown. Take out of the oven and set aside. Lower the temperature to 170 celcius.
  4. To make the topping, place the coconut, eggs and caster sugar in a medium bowl. Mix with a fork until well combined.
  5. Use a hot knife to spread jam evenly over warm slice base. Spoon coconut mixture over jam and use the back of a spoon to gently press all over. Bake in preheated oven for 20 minutes or until top is golden and base is cooked through. Remove from oven and stand for 15 minutes. Use the baking paper to lift slice out of pan. Cut into squares.

Passionfruit Slice
Ingredients
  • 125g butter
  • ½ cup caster sugar
  • 1 egg
  • 1½ cups SR flour, sifted
  • 400g can sweetened condensed milk
  • 225g can reduced cream
  • ½ cup lemon juice
  • 3 rounded tablespoons custard powder
  • 1 cup caster sugar
  • 2 cups water
  • Pulp of 3 passionfruit
Instructions
  1. o make base, cream butter and sugar, and then add well-beaten egg. Fold in flour, and then press mixture into a lamington pan. Bake until golden brown (180° Celsius – check after 10-12 minutes).
  2. To make topping, combine condensed milk, cream and lemon juice. Spread over cooled base.
  3. Blend custard powder, caster sugar and water, then boil until thickened, stirring constantly.
  4. Add the passionfruit pulp and mix. Pour over filling and chill.

Ingredients
  • ½ Cup sweetened condensed milk
  • 125 grams butter
  • 250 grams biscuits (arrowroot or wheat are good)
  • 1 cup coconut
  • 1¾ cups icing sugar
  • 3 tablespoons lemon juice
  • 1 tablespoon butter extra
Instructions
  1. Stir milk and butter over a low heat until melted. Crush the biscuits and add coconut. Mix in the milk and butter well and press into a lamington tin. Refigerate for one hour. Rub the extra butter into the icing sugar and then mix in lemon juice to get a soft icing. Spread on slice. No cooking needed.

Ingredients
  • 8 tablespoons butter or margarine
  • 6 tablespoons sugar
  • 2 tablespoons honey
  • ½ to 1 cup of nuts
  • 4 cups of rice bubbles
Instructions
  1. Boil in saucepan; margarine, sugar and honey for three minutes. Add rice bubbles and nuts. Spread in flan dish and set in fridge.

Marshmallow and Chocolate Slice
Ingredients
  • ½ cup butter
  • 2 cups Chocolate Chips
  • 6 cups miniature marshmallows
  • 1 cup finely chopped nuts
Instructions
  1. In a saucepan over a low heat, melt butter and chocolate chips, stirring until blended.
  2. Take away from heat and cool for 5 minutes.
  3. Stir in marshmallows and nuts; dont let marshmallows melt.
  4. Pour mixture into a baking paper lined loaf tin. Wrap in foil; refrigerate about 20 minutes.
  5. Coat rolls in additional nuts.
  6. Wrap and refrigerate overnight. Cut rolls into ¼-inch slices.

  • 2 eggs.
  • ¼ cup marg / butter.
  • ¾ cup sugar.
  • ¾ cup coconut.
  • 2 tbs cocoa.
  • 1 pkt milk coffee biscuits
Instructions
  1. (1) Crush biscuits place in large bowl, add coconut + cocoa mix well.
  2. (2) Heat butter in saucepan, mix in sugar cool slightly.
  3. ) Add eggs to butter + sugar mixture stirring well.
  4. (4) Combine biscuit mixture with butter mixture.
  5. (5) press into a rectangle dish (lamington pan)?.
  6. (6) put icing on top and refrigerate till set at least 2 hrs.
  7. Icing :
  8. cups iceing sugar.
  9. tbs marg melted.
  10. tbs cocoa.
  11. tbs milk.
  12. Method :
  13. (1) sift 2 cups iceing sugar with cocoa into mixing bowl.
  14. (2) add melted buter and mix through add milk if to dry.
  15. (3) place iceing over top even layer and refrigerate.
  16. Hints : Cut into bit size and serve as a treat very filling,you can also make same mixture except just use 1 egg and 4 cups rice bubbles instead of biscuits and make rice crackles also very yummy.

  • 1¼ cups self-raising flour
  • 2 tablespoons cocoa
  • ¾ cup coconut
  • ½ cup castor sugar
  • 6 tablespoons butter
  • 1 egg
Instructions
  1. Sift flour and cocoa together. Add coconut and sugar and mix well.
  2. Melt butter in a saucepan.
  3. Beat egg well.
  4. Add melted butter and egg to dry ingredients. Stir well to combine.
  5. Press into a greased 28 cm x 18 cm 1amington tin.
  6. Bake in a moderate oven for 10 to 15 minutes.
  7. Allow to cool in tin.
  8. When cold spread with chocolate icing and sprinkle with coconut if desired.
  9. Cut into squares.
