Ingredients
  • 250 grams butter
  • 2 tablespoons of oil
  • 2 teaspoons worcestshire sauce
  • 1 teaspoon garlic salt
  • 1 teaspoon paprika
  • ½ teaspoon Cayenne pepper
  • 500 grams Nutrigrain cereal
  • 500 grams salted peanuts
Instructions
  1. Melt the butter and oil together over a low heat. Mix the sauce, salt and spices together. Add to melted oils. Combine all ingredients together and mix well. Spread in a large baking dish and cook in a low oven (125 C) for approx 1 hour, turning every 15 minutes. Cool before serving and store in an airtight container.

Ingredients
  • 1 persimmon
  • ·1 wedge aged cheddar
  • ·1 wedge blue cheese
  • ·4 shaved slices prosciutto
  • ·biscuits, crackers or crusty bread to serve
  • ·cracked black pepper if desired
Instructions
  1. ·Assemble the ingredients on a board or platter.
  2. ·Top crackers or bread with cheese, prosciutto and persimmon slices.
  3. PLEASE NOTE: The cheese selection can be varied to include soft cheeses such as brie or a white castello. Good depth of flavour in the cheeses is important to marry with the subtle sweetness of the persimmon.

  • Puff Pastry
  • Grated Cheese
  • Spinach
  • Bacon
  • Egg, Beaten
Instructions
  1. Cut squares of pastry 10cm by 10cm.
  2. Place a small amount of spinach in one corner of pastry, topped with cheese and bacon, and then fold the opposite corner over it, to form a triangle. Press down sides and prod the top with a fork to allow air in. Brush over with egg and place in oven on moderate until golden brown.
  3. ENJOY!!!

Savoury Biscuits
Ingredients
  • 1 cup self raising flour
  • ½ teaspoon salt
  • 2 tablespoons water
  • 15g butter
Instructions
  1. Boil water. Pour into a cup with butter and stir till melted.
  2. Pour into a bowl with flour and salt mix into a dough. (If requied add more water)
  3. Knead lightly and roll out as thinly as possible.
  4. Cut into squares and season with herbs and spices (mixed herbs, tumeric, salt, pepper, paprika etc. etc.)
  5. Bake in a hot oven (200°c) for 15 - 20 minutes or until golden brown.

Hot Cheesie Triangles
Ingredients
  • 15 sheets ready made filo pastry
  • 90 grams butter melted
  • Filling:
  • 200 grams fetta cheese, grated
  • 125 grams mature cheddar cheese
  • ¼ teaspoon ground nutmeg
  • ¼ cup snipped chives
  • black pepper
Instructions
  1. Preheat oven to 190 degrees C. Grease 2 large baking trays. For the filling, crumble the fetta cheese into a bowl. Stir in the cheddar cheese, chives and nutmeg. season to taste with pepper. Place a sheet of filo pastry on a cold, dry work surface; brush with melted butter. Cut filo in half, lengthways, with kitchen scissors. Fold each half in half lengthways and brush with more butter. Cover remaining pastry with clear plastic wrap. Put 4 level teaspoons of the filling on the lower corner of each strip. Fold the filo over the filling to form a triangle. Continue folding over along the pastry strip to form a triangular package, completely encasing the filling. Put on a baking tray. Fold the other pastry strip in the same way. Repeat with the remaining filo pastry and filling. Brush the triangles all over with melted butter. Bake for 15 minutes, or until crisp and golden brown. serve warm.

Ingredients
  • 4 eggs, hard boiled
  • 1 Tbsp mayonnaise
  • ¼ tsp curry powder
  • 12 baby cos lettuce leaves
Instructions
  1. Place eggs in a bowl and mash, add mayonnaise and curry powder and combine. Arrange the lettuce leaves on a serving platter and spoon in the egg mixture and serve.

  • 30g butter
  • 30g grated parmesen cheese
  • ½ teaspoon salt
Instructions
  1. Melt butter in a small pan over a low heat.
  2. Stir in grated cheese and salt.
  3. Spoon over popcorn and mix well.

Cheese Fingers

Cheese Fingers
Ingredients
  • ½ cup grated Parmesan
  • ½ cup grated cheddar
  • 125g butter, at room temperature, chopped
  • 1 egg
  • 1¼ cups plain flour
  • ¼ tsp cayenne pepper
  • 2 Tbsp finely chopped chives
  • sea salt, to serve (optional)
Instructions
  1. Preheat oven to moderate, 180 C. Line 2 baking trays with baking paper.
  2. Place Parmesan, cheddar and butter into a bowl. Using fingertips rub together. Add the egg and mix well. Sift together flour and cayenne into the cheese mixture. Add chives. Mix until dough comes together.
  3. Turn dough out onto a floured surface. Knead until smooth. Wrap in plastic film and chill until firm enough to handle.
  4. Break dough into 4 portions and roll into long thin sausage shapes, cut each into 8cm lengths and arrange on prepared baking trays.
  5. bake for 10 to 12 mins until golden. Allow to cool on trays for 5 mins. Transfer to a rack to cool completely. Sprinkle with sea salt to serve.

Macaroni Cheese

Macaroni Cheese
Ingredients
  • 185 g macaroni
  • ½ teaspoon salt
  • 2 rashers bacon
  • pepper
  • 1 onion
  • 250 g cheese
  • 2 tablespoons butter
  • 2 tomatoes
  • 2 tablespoons flour
  • 2 tablespoons butter, extra
  • ¼ teaspoon dry mustard
  • ½ cup dry breadcrumbs
  • 600 ml milk
Instructions
  1. Cook macaroni in boiling salted water until tender, approximately 15 minutes.
  2. Drain and rinse under running water.
  3. Chop bacon and peel and chop onion finely.
  4. Melt butter in a pan, and saute onion and bacon until bacon is crisp. Remove from pan.
  5. Stir flour and mustard into butter remaining in pan. Cook 1 minute.
  6. Remove from heat and gradually add milk.
  7. Return to heat and stir until sauce boils and thickens. Season with salt and pepper.
  8. Grate the cheese and stir in three-quarters of the cheese until it melts.
  9. Add bacon, onion and macaroni.
  10. Spoon into a well greased ovenproof dish.
  11. Slice tomatoes and place slices on top of mararoni mixture.
  12. Combine extra melted butter and breadcrumbs. Sprinkle over the top of the macaroni and tomato.
  13. Top with remaining grated cheese.
  14. Bake in a moderate oven for 25 to 30 minutes until we11 browned.

Corn and bacon fritters

Corn and bacon fritters
Ingredients
  • 1 small can of corn
  • 60 grams (1/2 cup) self-raising flour
  • oil for frying
  • 60ml milk
  • 2 rashers bacon
Instructions
  1. Strain the corn.
  2. Dice the rashers of bacon.
  3. Fry gently for a few minutes.
  4. Remove from the pan.
  5. Make a batter with the flour and milk.
  6. Stir in the corn and bacon.
  7. Heat some oil in the frying pan and fry tablespoons of the mixture, turning once, until golden brown on both sides, about 5 minutes.
  8. These are a great way to use up leftovers such as corned beef, roast meats and veges.
