Chinese Chews
  • 1 cup chopped walnuts
  • 2 eggs, beaten
  • 1 cup white sugar
  • ¾ cup self raising flour
  • good pinch salt
  • Granulated sugar
  • 1 cup finely chopped stoned dates
  1. Grease a Cookie Tray. Combine flour, salt and sugar in a bowl. Add dates, nuts, then eggs, mixing thoroughly. Spread, as thinly as possible,on prepared Tray. Bake in a moderate oven (180°c) for 30 minutes. Immediately after removing from oven, cut into small squares and roll into balls. Roll the balls in sugar and store until needed in an airtight tin. Makes about 4 dozen.
