Coffee Cake

Coffee Cake
  • 3 cups plain flour
  • 3 teaspoons baking powder
  • 125 g butter
  • finely grated rind of 1 lemon
  • 1½ cups sugar
  • 3 eggs
  • 1 cup milk
  • ½ teaspoon lemon or almond essence
  • Topping:
  • chopped nuts
  • cinnamon
  • brown sugar
  • a little butter
  1. Grease a Bread Tin and paper line the base. Sift the flour with powder into a mixing bowl. Rub in butter with the fingertips. Add lemon rind and sugar. Combine eggs with milk and lemon or almond essence. Add to the rubbed in mixture and mix well. Pour into prepared tin.
  2. Topping:
  3. Sprinkle with chopped nuts, cinnamon, and brown sugar. Dot with a little butter and bake in a moderately hot oven (I90C) for one hour or until cooked.
