Hot Savoury Eggs
  • 6 hard boiled eggs
  • 1 tablespoon plain flour
  • 1 tablespoon finely chopped ham or bacon
  • 1 egg, beaten 1 teaspoon chopped parsley
  • dry breadcrumbs
  • 1 teaspoon butter
  • oil or fat for frying
  • salt and pepper
  1. Cut eggs in half lengthwise. Remove yolks and mash with a fork. Add ham, parsley, butter, salt and pepper. Put the halves together, roll in flour, then in egg and finally in the breadcrumbs. Fry in hot fat or oil.
