Harvest Cake
 
Ingredients
  • ½ cup All Bran
  • 2 eggs
  • 1⅓ cups plain flour
  • ⅔ cup cold coffee
  • 2 apples unpeeled and chopped
  • 100 grams butter or margarine
  • ½ cup walnut pieces
  • 1 tsp cinnamon
  • 1 cup castor sugar
  • 1 tsp bicarb
  • ½ cup sultanas
  • ¼ tsp nutmeg
Instructions
  1. Soak the All bran in coffee for half an hour. Cream the butter and sugar. Add eggs and All Bran mixture. Add the fruit and nuts then fold in the dry ingredients.
  2. Bake in a moderate oven for 45 minutes - an hour.
