Mince Tart
  • 375g shortcrust pastry
  • ½ teaspoon ground cinnamon
  • 2 apples
  • ½ teaspoon grated nutmeg
  • ¼ cup currants
  • 2 tablespoons water
  • ¼ cup sugar
  • Grated rind and juice of ½ lemon
  • ¼ cup sultanas
  • 15g butter
  • ¼ cup mixed peel
  • A little extra sugar
  • ½ teaspoon mixed spice
  1. Grease a 20cm Pie Plate. Roll out pastry thinly and line the Pie Plate with half of it. Combine all the remaining ingredients except the extra sugar and spoon into the pastry lined shell. Damp pastry edges and cover with the rest of the pastry. Crimp edges and cut slits in the top. Brush with water and sprinkle with the extra sugar. Bake in a hot oven (220°C) for 10 minutes, then reduce heat to 180°C for a
