Basic Pizza Base

Basic Pizza Base

Ingredients

½ cup water lukewarm
1 sachet 7g dry yeast
½ teaspoon salt
1 teaspoon sugar
½ teaspoon oregano
1½ cups plain flour

Instructions

Place warm water in a shallow bowl. Add yeast, salt, sugar and oregano. Stir to dissolve yeast. Add ½ cup flour and blend all ingredients, until smooth. Stir in remaining flour. Cover, in a bowl, with cling wrap and allow to rise for 20 minutes. Spread dough evenly with oiled spoon, on a 12" tray or 2 x 8" trays. Cover with tomato paste, cheese, ham, pineapple etc.
Cook in a 200 degrees celsius oven until the base is cooked and the cheese is beginning to brown.

Banana Muffins

Banana Muffins

Ingredients

2 cups SR Flour
¼ tsp nutmeg
⅓ cup brown sugar
1 cup mashed banana
1 egg, lightly beaten
1 cup milk
2 tablespoons of butter, melted

Instructions

Preheat the oven to 200 C. Brush oil on the bottoms of 12 muffin tins.
Mix flour, nutmeg and sugar in a bowl.
In another bowl mix the milk, egg, butter and banana.
Pour the egg mixture into the flour and fold in with a fork. Do not over mix.. it just has to be wet mostly through, it doesn't even matter if there are small areas of flour about. This is the main secret to good muffins.
Spoon into muffin tins, filling each one about ⅔.
Bake for 15 - 20 mins or until just starting to brown.

Avocado Bread

Ingredients

3 Cups plain flour
1½ Cups Sugar
1 tsp Bi carb soda
1 tsp Baking powder
⅛ tsp Cinnamon
1 tsp Salt
3 Eggs
1½ Cup Mashed avocado
½ Cup Vegetable oil
3 tsp Vanilla
1 Cups Chopped walnuts

Instructions

Heat the oven to 180 degrees.
Beat sugar, eggs and vanilla well, then add the avocado and oil. Mix until smooth.
Gradually add sifted dry ingredients and beat until smooth.
Stir in the chopped nuts last.
Pour the mixture into two greased loaf pans and bake for 50 - 60 minutes or until a knife inserted in the centre comes out clean.
Remove from pan and cool completely before slicing.

Easy Easter Cookies

Easy Easter Cookies

The children can help to make the Easter desserts. Let them arrange the cookies on a serving platter and present them to the family members after dinner.

Ingredients

One or two packages vanilla refrigerated cookie dough
Cake icing in pink, white, and yellow
Easter cookie cutter shapes (eggs, chicks, bunnies, flowers)
Assorted candy sprinkles
One cup of plain flour

Instructions

Let the dough come to room temperature. Flour a cutting board and roll out the dough to a quarter of an inch in thickness, one package at a time.
Take the cookie cutter shapes and cut out the cookies.
Bake on an ungreased cookie sheet for seven to ten minutes at 350 degrees (or following the directions on the dough).
Allow the cookies to cool before using icing.
Decorate the cookies with icing and the candy sprinkles.

Apple Banana Bread

Ingredients

½ cup Butter, softened
½ cup Brown Sugar
½ cup White Sugar
2 Eggs
3 tablespoon Sour Cream
1 mashed Banana
1 teaspoon Vanilla
2 cups Plain Flour
1 teaspoon Baking Powder
1 teaspoon Bicarb Soda
½ teaspoon Cinnamon
2 Apples, cored and chopped
½ cup Chopped Walnuts or pecans

Instructions

Preheat oven to 180 Celsius. Cream butter and sugars, and beat in eggs. Stir in sour cream, banana and vanilla. In a separate bowl, combine flour, baking powder, bicarb soda and cinnamon.
Gradually add to butter mixture. Gently stir in apples and nuts. Spoon into greased loaf pan and bake for 1 hour.
