Strawberry Muffins
  • 1¾ cup plain flour
  • 2 tablespoons of caster sugar
  • 4½ tsp baking powder
  • 1 cup of chopped strawberries
  • 1 egg beaten
  • ¾ cup milk
  • 1 tsp vanilla
  • 80gr butter melted
  1. Preheat the oven to 200 celsius. Brush oil on the bottoms of 12 muffin tins. Mix the dry ingredients with the strawberries in one bowl. In another mix the egg, milk, vanilla and butter. Ad the liquid ingredients to the dry ones and fold lightly with a fork. Just fold to combine and wet, do not over mix. Fill each muffin tin ⅔. Cook for around 20 mins or until starting to brown and a skewer comes out clean. Cool on a wire rack.
