Basil and Cashew Pesto

Basil and Cashew Pesto
  • ½ cup cashews
  • 1 cup grated parmesan cheese
  • ⅓ cup fresh basil
  • ⅓ cup olive oil
  • squeeze of lemon juice
  1. Finely grind or process ½ cup cashews (I use unsalted roasted ones) with 1 cup grated parmesan cheese and ⅓ cup fresh basil.
  2. Slowly add ⅓ cup olive oil, and a squeeze of lemon juice while processing it until well combined.
  3. Toss through hot pasta and serve.
