Ginger Butter Cake

Ginger Butter Cake
Ingredients
  • 1½ cups plain flour
  • 125g butter
  • 1 teaspoon cream of tartar
  • ¾ cup sugar
  • ½ teaspoon bicarbonate of soda
  • 2 eggs
  • 2 teaspoons ginger
  • ½ cup milk, approx.
  • 2 teaspoons cinnamon
Instructions
  1. Grease and paper line the base of two 20cm Round Sandwich Pans. Sift flour, cream of tartar, bicarbonate of soda, ginger and cinnamon together. Cream butter and sugar until light in colour, add eggs, sifted ingredients and sufficient milk to form a soft dropping consistency. Spoon equally into the prepared Pans. Bake in a moderately hot oven (190°C) for 20 to 30 minutes or until cooked. Leave in pans for 5 minutes before turning out on to a cake rack. Sandwich together with butter cream and top with glace icing.

Fruit Cake with Pumpkin

Fruit Cake with Pumpkin
Ingredients
  • 1 cup plain flour
  • 1½ cups SR Flour
  • 1 cup sugar
  • 1 cup butter
  • 500 grams mixed fruit
  • 3 eggs
  • 1 cup mashed pumpkin
  • pinch salt
  • 1 tsp vanilla
Instructions
  1. Cream the butter and sugar, add egg and mashed pumpkin, mix well. Stir in fruit and and flour. Bake for 2 hours at 180C or until browned and a skewer comes out clean.

Easy Banana Cake

Easy Banana Cake
Ingredients
  • 1 cup self-raising flour
  • 1 cup caster sugar
  • 50g butter, melted
  • 1 egg, lightly beaten
  • 1 teaspoon vanilla essence
  • ¼ cup milk
  • ½ cup mashed banana
Instructions
  1. Preheat oven to 180C/160C fan-forced. Spray a 10 x 20cm loaf pan with oil. Line base and sides with baking paper, extending above the edge.
  2. Sift flour into a large bowl. Stir in sugar. Make a well in the centre. Add butter, egg, vanilla, milk and banana. Stir until just combined.
  3. Pour into prepared pan. Bake for 30-35 minutes or until a skewer inserted into centre comes out clean. Set aside in pan for 10 minutes to cool slightly. Serve warm or transfer to wire rack to cool completely.
  4. Nice iced with lemon icing or cream cheese frosting.

Coffee Crumble

Coffee Crumble
Ingredients
  • 2 cups self raising flour
  • ½ cup brown sugar
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 8Og butter
  • 40g butter, melted
  • ⅔ cup milk
  • ¼ cup finely chopped nuts or desiccated coconut
Instructions
  1. Scone Dough:
  2. Grease and paper line the base of a Ring Cake Pan Sift Hour and salt into a large mixing bowl. Rub in butter with the fingertips. Stir in milk. Drop by table-spoonsful into prepared Pan.
  3. Cinnamon Crumble:
  4. Combine brown sugar, cinnamon, melted butter and nuts and sprinkle over scone dough. Bake in a hot oven (220°C) for 20 to 25 minutes or until cooked.

  • 3 cups plain flour
  • 3 teaspoons baking powder
  • 125 g butter
  • finely grated rind of 1 lemon
  • 1½ cups sugar
  • 3 eggs
  • 1 cup milk
  • ½ teaspoon lemon or almond essence
  • Topping:
  • chopped nuts
  • cinnamon
  • brown sugar
  • a little butter
Instructions
  1. Grease a Bread Tin and paper line the base. Sift the flour with powder into a mixing bowl. Rub in butter with the fingertips. Add lemon rind and sugar. Combine eggs with milk and lemon or almond essence. Add to the rubbed in mixture and mix well. Pour into prepared tin.
  2. Topping:
  3. Sprinkle with chopped nuts, cinnamon, and brown sugar. Dot with a little butter and bake in a moderately hot oven (I90C) for one hour or until cooked.

Chocolate Surprise
Ingredients
  • 60g butter, softened
  • ⅓ cup milk
  • ¾ cup self raising flour
  • 1 egg
  • ¼ teaspoon salt
  • ½ teaspoon vanilla essence
  • ½ cup sugar
  • A little sifted icing sugar
  • 1 cup cream
  • ¼ cup cocoa
  • ½ cup icing sugar
  • ¼ teaspoon salt
Instructions
  1. Grease, flour and paper line the base of a Bar Cake Pan. In a mixing bowl place butter and stir to soften. Sift flour and salt. Add to butter with sugar and milk. Beat for two minutes. Add egg and vanilla essence Beat for a further two minutes. Spoon into prepared Pan and bake in a moderately hot oven (190°C) for 30 to 35 minutes.
  2. Allow to cool in the Pan for 10 minutes before turning out on to a wire rack. When cold, slice top off cake and fill with Chocolate Surprise Filling. Replace top and sprinkle wilh icing sugar.
  3. Chocolate Surprise Filling
  4. cup cream
  5. /4 cup cocoa
  6. /2 cup icing sugar
  7. /4 teaspoon salt
  8. Combine all ingredients in a small mixing bowl and beat until thick.

Chocolate Mud Cake

  • Butter 250 grams
  • Hot Water 1 and a half cups
  • Castor Sugar 2 Cups
  • Cocoa ¼ cups
  • Coffee (instant) 1 tablespoon
  • Dark Cooking Chocolate 200 grams
  • Self Raising Flour 1 and a half Cups
  • 2 Eggs
  • Vanilla Essence
  • For the Icing
  • 125 grams Dark Cook Chocolate
  • 125 grams Butter
Instructions
  1. Melt the butter, chocolate and sugar in a double boiler
  2. Pour melted mixture into a electric mixing bowl. Add sifted dry ingredients gradually whilst mixing
  3. Add eggs and vanilla and beat well
  4. Pour the mixture into a 25cm greased and lined cake tin.
  5. In a slow oven (about 150 C) bake for 2½ hours.
  6. let stand for a few minutes before removing from the cake tin. Apply icing when the cake is cool
  7. Icing instructions:
  8. Melt chocolate and butter in double boiler and mix with a wooden spoon. When completely mixed pour over the cooled cake and smooth out. Let it set then serve.

  • 6 tablespoons butter
  • 1 cup castor sugar
  • 1 large egg
  • ½ teaspoon vanilla
  • 1½ cups self-raising flour
  • pinch salt
  • ¼ teaspoon bicarb
  • 2 tablespoons cocoa
  • ½ cup milk
  • ¼ cup boiling water
Instructions
  1. Cream the butter and sugar.
  2. Add beaten egg and vanilla. Beat well.
  3. Sift flour, salt, bicarbonate of soda and cocoa.
  4. Fold in dry ingredients alternately with milk.
  5. Add boiling water and mix thoroughly.
  6. Pour into a well greased and floured block cake tin.
  7. Bake in a moderate oven for 45 minutes or until a skewer inserted in the middle comes out clean.
  8. Cool on a wire rack.
  9. Ice with chocolate icing and sprinkle with coconut, sprinkles or nuts.

Caraway Seed Cake
Ingredients
  • 250g butter
  • 3 cups self raising flour, sifted
  • 1 cup sugar
  • ¼ cup milk, approx.
  • 4 eggs
  • 1 tablespoon caraway seeds
Instructions
  1. Grease and paper line the base of a 23cm Spring form Pan. Cream butter and sugar until light and fluffy. Add eggs very gradually and flour, alternately with enough milk to make a dropping consistentency. Add caraway seeds and spoon into prepared Pan. Bake in a moderately hot oven (180 C) for 1 hour or until cooked.

  • 375g Mixed Dried Fruit
  • 1 cup of sultanas
  • 2 cups of milk
  • 120 grams butter
  • 1 cup of sugar
  • 1 tsp bi carb soda
  • 1 cup plain flour
  • 1 cup self raising flour
  • 1 tsp each of mixed spice and cinnamon
  • 2 well beaten eggs
Instructions
  1. Put on to boil: 375g Mixed Dried Fruit, 1 cup of sultanas, 2 cups of milk, 120 grams butter, 1 cup of sugar.
  2. When boiling add 1 tsp bi carb soda and boil for 1 minute. When cool add: 1 cup plain flour, 1 cup self raising flour, 1 tsp each of mixed spice and cinnamon. Lastly add 2 well beaten eggs. Cook for 1½ to 2 hours in a moderate oven.
