Bikies Bread - Beer Bread
This is a beer bread recipe my dad used to make when I was young.
Ingredients
  • 3 cups of SR Flour (I often use half wholemeal)
  • half a teaspoon o salt
  • 1 stubbie of beer (not light) About 350 - 400ml
Instructions
  1. Mix together and pour into a loaf pan that has been well greased. Sprinkle with some grated cheese. One large loaf should take about 50 - 60 mins in a 200 C oven. Bake until browning.

Beer Cake

Beer Cake
Ingredients
  • 100 grams butter
  • 4 cups SR Flour
  • 1 cup sugar
  • 2 cups beer
  • 1 beaten egg
  • 1 cup mixed fruit
  • 1 tsp mixed spice
Instructions
  1. Rub the butter into the flour. Mix sugar and spice into flour. Then add the fruit and egg. Add beer, mixing well. Pour into a 10 inch baking dish.
  2. You can add this topping to it:
  3. cup plain flour, 1 cup sugar, 80 grams of butter. Crumble together and sprinkle over the cake.
  4. Bake at 160 C for around 30 minutes.

Ingredients
  • ½ cup water lukewarm
  • 1 sachet 7g dry yeast
  • ½ teaspoon salt
  • 1 teaspoon sugar
  • ½ teaspoon oregano
  • 1½ cups plain flour
Instructions
  1. Place warm water in a shallow bowl. Add yeast, salt, sugar and oregano. Stir to dissolve yeast. Add ½ cup flour and blend all ingredients, until smooth. Stir in remaining flour. Cover, in a bowl, with cling wrap and allow to rise for 20 minutes. Spread dough evenly with oiled spoon, on a 12" tray or 2 x 8" trays. Cover with tomato paste, cheese, ham, pineapple etc.
  2. Cook in a 200 degrees celsius oven until the base is cooked and the cheese is beginning to brown.

Banana Muffins

  • 2 cups SR Flour
  • ¼ tsp nutmeg
  • ⅓ cup brown sugar
  • 1 cup mashed banana
  • 1 egg, lightly beaten
  • 1 cup milk
  • 2 tablespoons of butter, melted
Instructions
  1. Preheat the oven to 200 C. Brush oil on the bottoms of 12 muffin tins.
  2. Mix flour, nutmeg and sugar in a bowl.
  3. In another bowl mix the milk, egg, butter and banana.
  4. Pour the egg mixture into the flour and fold in with a fork. Do not over mix.. it just has to be wet mostly through, it doesn't even matter if there are small areas of flour about. This is the main secret to good muffins.
  5. Spoon into muffin tins, filling each one about ⅔.
  6. Bake for 15 - 20 mins or until just starting to brown.

Avocado Bread

 

 

Avocado Bread
Ingredients
  • 3 Cups plain flour
  • 1½ Cups Sugar
  • 1 tsp Bi carb soda
  • 1 tsp Baking powder
  • ⅛ tsp Cinnamon
  • 1 tsp Salt
  • 3 Eggs
  • 1½ Cup Mashed avocado
  • ½ Cup Vegetable oil
  • 3 tsp Vanilla
  • 1 Cups Chopped walnuts
Instructions
  1. Heat the oven to 180 degrees.
  2. Beat sugar, eggs and vanilla well, then add the avocado and oil. Mix until smooth.
  3. Gradually add sifted dry ingredients and beat until smooth.
  4. Stir in the chopped nuts last.
  5. Pour the mixture into two greased loaf pans and bake for 50 - 60 minutes or until a knife inserted in the centre comes out clean.
  6. Remove from pan and cool completely before slicing.

  • ½ cup Butter, softened
  • ½ cup Brown Sugar
  • ½ cup White Sugar
  • 2 Eggs
  • 3 tablespoon Sour Cream
  • 1 mashed Banana
  • 1 teaspoon Vanilla
  • 2 cups Plain Flour
  • 1 teaspoon Baking Powder
  • 1 teaspoon Bicarb Soda
  • ½ teaspoon Cinnamon
  • 2 Apples, cored and chopped
  • ½ cup Chopped Walnuts or pecans
Instructions
  1. Preheat oven to 180 Celsius. Cream butter and sugars, and beat in eggs. Stir in sour cream, banana and vanilla. In a separate bowl, combine flour, baking powder, bicarb soda and cinnamon.
  2. Gradually add to butter mixture. Gently stir in apples and nuts. Spoon into greased loaf pan and bake for 1 hour.

  • ½ cup chopped walnuts
  • 1 egg, lightly beaten
  • 1 cup milk
  • 2 tablespoons of butter, melted
