Steak Diane
Ingredients
  • 4 pieces fillet steak
  • 4 cloves garlic (crushed)
  • 4 tblspn oil
  • 2 tblspn butter
  • 2 tblspn french mustard
  • 4 tblspn red wine
  • 4 tblspn tomato sauce
  • 1 tblspn worchestershire sauce
  • 4 tblspn cream
Instructions
  1. mix oil and garlic, rub into steaks and leave for 1 hour
  2. fry steak on one side till sealed and turn over, rub mustard into sealed side fry until sealed on the other side remove from pan and set aside.
  3. Sauce
  4. (In the same pan) Reduce heat, add wine and sauces and simmer, stir in cream, season with salt and pepper. Return steak to pan with mustard side down and slowly simmer till steak is cooked and sauce has reduced to a nice consistancy. Turn steak often to keep covered in sauce.

Steak and Mushroom Casserole

Steak and Mushroom Casserole
Ingredients
  • 1 kg stewing steak
  • Plain flour with slt and pepper added
  • 2 tablespoons butter
  • 1 tablespoon oil
  • 1 onion, chopped
  • 250g mushrooms
  • 2 tablespoons chopped parsley
  • 1 teaspoon mixed herbs
  • 3 cups of beef stock
Instructions
  1. Trim any extra fat off the steak. Cut the steak into cubes (2.5cm) and roll in the flour.
  2. Heat the butter and oil in a flameproof casserole dish. Fry the onion until it is soft and then add the meat and fry until brown.
  3. Slice the mushrooms if they are big and add to the meat with the herbs and stock. Bring to the boil.
  4. Place the casserole in a moderate oven and cook for 1½ - 2 hours or until the meat is tender.

Steak and kidney pie

Steak and kidney pie
Ingredients
  • 375g frozen puff pastry
  • 705g topside steak
  • 2 kidneys
  • 2 onions
  • 2 carrots
  • 1 bacon rasher
  • 4 tbls butter
  • 2 tbls flour
  • 2 cups water
  • 2 beef stock cubes
  • 1 tsp salt
Instructions
  1. Cut the steak and kidney into small cubes.
  2. Peel and chop pnions and carrots. Dice bacon.
  3. heat 2 tbls butter in a large pan and fry meat until browned.Remove from pan.
  4. Melt other 2 tbls butter in pan. Stir in the flour.
  5. Remove from heat and add water, stock cubes, salt and pepper.
  6. Return to the heat. Stir until the sauce boils and thickens.
  7. Put meat and vegetables back in pan. Cover and simmer until meat is tender - about 1¼ hours.
  8. Tip the meat into it a pie dish.
  9. Roll out thawed pastry until it is just a bit bigger than the pie plate.
  10. Cut a strip of pastry 1cm wide. Moisten the rim of the pie plate and place strip around the rim.
  11. Moisten the pastry strip and carefully place rolled out pastry over the top of the dish.
  12. Trim the edges of the pastry with a sharp knife. Seal and flute the edges.
  13. Glaze with egg and milk.

Spaghetti Bolognaise

Spaghetti Bolognaise
Ingredients
  • 1 onion
  • 1 carrot
  • 1 celery stick
  • 2 rashers bacon
  • 1 clove garlic
  • 2 tbls oil
  • 500g minced steak
  • 3 tbls tomato paste
  • 1 tsp oregano
  • 2 beef stock cubes
  • 1 cup water
  • 2 tsp worchestershire sauce
  • 1 tbls fruit chutney
  • salt and pepper
  • 375g spaghetti
  • 120g grated cheese
Instructions
  1. Peel and chop onion and carrot. Slice celery finely.
  2. Chop bacon. Crush garlic.
  3. Heat oil in a large shallow pan, add vegetables and bacon and saute gently until onion is brown.
  4. Add minced steak and stir well until the meat is browned.
  5. Add tomato paste, oregano, beef cubes, water, sauce and chutney. Season.
  6. Mix well and bring to the boil. Reduce heat and simmer uncovered for 30 minutes or until nearly all the liquid is evaporated.
  7. Cook spaghetti in boiling salted water for 20 minutes or until tender.
  8. Drain well and rinse under hot water.
  9. Pile spaghetti on serving plates and spoon sauce over.
  10. Sprinkle with cheese.

Slow Cooker Silverside

Slow Cooker Silverside
Ingredients
  • 1 beef silverside cut (usually around 1kg)
  • 8 peppercorns
  • 2 tablespoons of brown sugar
  • 1 small onion
  • 1 carrot
Instructions
  1. Wash the silverside to remove some of the salt. Put it in a slow cooker covered with water. Add peppercorns and sugar. Quarter the onion and roughly chop the carrot. Add to slow cooker. Cook on high for 4 - 5 hours or low for 8 hours. Carve to serve.
  2. You can also add vegetable such as potato, carrot, parsnip and sweet potato in the last 2 or 3 hours of cooking. Nice served with these and a white sauce made from the cooking water.

Slow Cooker Beef and Potatoes

Slow Cooker Beef and Potatoes
Ingredients
  • 1kg beef mince
  • 1 can condensed tomato soup
  • 1 tsp Salt
  • 6 medium potatoes
  • ½ tsp pepper
  • 1 cup light cream
  • ¼ cup finely chopped onions
Instructions
  1. In large skillet or crock-pot with browning unit, brown beef; break up large chunks with fork. Pour off excess fat. In a small bowl, mix together salt, pepper, onion, and undiluted soup. Peel and slice potatoes, thinly. In Crock Pot arrange alternate layers of potatoes and meat, with potatoes on bottom. Pour soup mixture over. Cover and cook on low for 4 to 6 hours. Turn control to high. Pour cream over all; cover and cook on high for 15 to 20 min.
  2. Serves 6

Shepherds Pie

Shepherds Pie
Ingredients
  • 1kg Lean mince
  • 1 med Onion
  • 2 stalks Celery
  • 5 cups Mashed Potatoes
  • 1 can Tomato puree
  • 350g grated cheddar or tasty cheese
  • 1 tsp Garlic
  • 1 tsp Onion Powder
  • 1-1/2 tsp Oregano
  • Salt and Pepper to taste
  • ¼ cup water.
Instructions
  1. Step 1 ...Cut up your celery and onion in bite size pieces, saute in a little oil, until onion is translucent. Remove vegetables, add mince and cook until done. Drain grease and return mince to pan with the celery and onion. Add all your spices and ¼ cup water. Let simmer 10 minutes. Add your tomato paste mixing well.
  2. Step 2 ..Instant potatoes work best with this recipe since it is a quick meal for an entire family. Make your potatoes according to the directions, approximate 5 cups. (For added flavour to your potatoes, add some onion powder, salt and pepper, or what ever spices you like. (A TBL of mayonnaise will make them rich in flavor and very few know why your potatos are so great!)
  3. In a casserole dish place the meat mixture on the bottom, cover with potatoes and top with the cheese.
  4. Bake on 180 degree's for 20 minutes.

Ingredients
  • 1 kg topside or round steak
  • 2 tablespoons flour
  • pinch grated nutmeg
  • 1 tablespoon brown sugar
  • 1 teaspoon salt
  • pinch cayenne pepper
  • ½ pint water
  • 1 tablespoon vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon tomato sauce
Instructions
  1. Trim steak. Mix together flour,nutmeg, sugar, salt and cayenne pepper, and rub well into steak.
  2. Place in a deep flameproof casserole; add
  3. water, vinegar and sauces.
  4. Cover with lid.
  5. Place in oven and cook slowly for 2 hours at 250d to 325dF.
  6. When cooked, lift steak on to a very hot dish or serve from casserole.
  7. Serve garnished wih gherkins cut into strips and a few capers.

Ingredients
  • 1 tablespoon plain flour
  • 2 teaspoons sugar
  • ¼ teaspoon mustard
  • ½ teaspoon pepper
  • 1 teaspoon salt
  • 1kg blade steak
  • 1 tablespoon tomato sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon vinegar
  • 1½ cups water
Instructions
  1. Combine flour, sugar, mustard, pepper and salt. Rub well into steak on both sides. Place in a casserole dish. Combine tomato sauce, Worcestershire sauce, vinegar and water. Bring to the boil and pour over steak in the casserole. Bake in a slow oven (160C) and cook for 2½ hours or until chops are tender.

Savoury Mince

Savoury Mince
Ingredients
  • 500g beef mince
  • 1 tsp curry powder
  • ½ cup long grain rice
  • 1 tin tomato soup
  • 1 large onion chopped
  • 1½ cups grated carrot
  • 2 cups beef stock
  • 1 cup frozen peas
Instructions
  1. Fry the onion in a little oil then add the mince and brown. Add the rest of ingredients and simmer with no lid until all the liquid is absorbed.
