Brandy Sauce

Brandy Sauce
Ingredients
  • 30g butter
  • 1 tablespoon plain flour
  • ½ cup milk
  • 1 tablespoon sugar
  • 1 tablespoon sweet sherry
  • 1 tablespoon brandy
  • ¼ cream
Instructions
  1. Melt butter in a small saucepan, add flour and cook for a few minutes. Gradually add milk , stirring continuously until boiling. Remove from heat and stir in sherry, brandy sugar and cream. Reheat but do not let it boil. Makes about 1 cup.

Blue Cheese Sauce

Blue Cheese Sauce
Ingredients
  • 100g blue vein cheese
  • 60g butter
  • 100ml cream
  • 1 pinch salt and pepper, to taste
Instructions
  1. Melt the cheese and butter together in a saucepan over a low heat. Pour in the cream and cook for about 3-4 minutes until the cream is thick. Season with salt pepper. If it doesn't seem to be thickening I use a tablespoon of rice flour mixed with a small amount of water and stir in to thicken. Serve with gnocchi or other pasta or over a steak.

Basil and Cashew Pesto

Basil and Cashew Pesto
Ingredients
  • ½ cup cashews
  • 1 cup grated parmesan cheese
  • ⅓ cup fresh basil
  • ⅓ cup olive oil
  • squeeze of lemon juice
Instructions
  1. Finely grind or process ½ cup cashews (I use unsalted roasted ones) with 1 cup grated parmesan cheese and ⅓ cup fresh basil.
  2. Slowly add ⅓ cup olive oil, and a squeeze of lemon juice while processing it until well combined.
  3. Toss through hot pasta and serve.

  • ½ cup pine nuts
  • 1 cup grated parmesan cheese
  • ⅓ cup fresh basil.
  • ⅓ cup olive oil
  • squeeze of lemon juice.
Instructions
  1. Finely grind or process ½ cup pine nuts with 1 cup grated parmesan cheese and ⅓ cup fresh basil.
  2. Add ⅓ cup olive oil, and a squeeze of lemon juice.
  3. Process until well combined.
  4. Toss through hot pasta and serve.
