Creamy Beef Stroganoff
  • 750g lean top sirloin cut into strips
  • ¼ teaspoon pepper
  • 250g fresh mushrooms, sliced
  • dash nutmeg
  • 1 large onion, sliced
  • 1 tablespoon plain flour
  • 60g butter
  • ¼ cup water
  • 1 teaspoon salt
  • 1 cup yoghurt
  • 1 teaspoon paprika
  1. Brown the sirloin strips, mushrooms and onion in the butter. Season with salt,
  2. paprika, pepper and nutmeg. Cover and simmer for 20 - 30 minutes, until meat is
  3. tender. Drain meat drippings into a saucepan and skim off extra fat. Make a paste,using the flour and water. When well blended, stir into the drippings. Heat, stirring constantly, until thickened. Just before serving, blend in yogurt. Pour the gravy over the meat and serve immediately.
