No Cook Lemon Cheesecake
  • 10g lemon gelatin
  • 1 cup boiling water
  • 1 package cream cheese, softened
  • 1 cup sugar
  • 400g evaporated milk
  • 1 pie crust
  1. Mix lemon gelatin and boiling water then chill slightly.
  2. In a mixing bowl, beat cream cheese and sugar until smooth; set aside.
  3. In another bowl, whip the sweetened condensed milk until stiff.
  4. Add the gelatin mixture to the cream cheese, then fold into the whipped sweetened condensed milk.
  5. Pour into the prepared crust. Chill overnight.
