- 1 head garlic separated, but not peeled.
- 3 tbsp of olive oil
- small handful of fresh thyme
- 10 pieces of chicken
- 2 lemons cut into ⅛ths
- 150ml of white wine
- Mix ingredients (other than wine and pepper) together in roasting pan. Sprinkle over wine and pepper, Cover tightly with foil and cook in oven at 160 C for 2hrs.
- Remove foil, increase temperature to 200 C for 35-40 mins until lemons scorched and chicken brown.
